Tomato and mushroom sauce
Argentinian cooking:
The mushrooms bring a natural flavor to tomato sauce. They are ideal to be combined with spaghetti for a different flavor.
Ingredients: (4 servings)
1 kg natural peeled tomatoes
2 tsp. Tomato extract
2 spring onions
2 medium onions
1 red pepper
200 gr mushrooms
1 glass dry red wine
2 cups beef broth
1 tsp. Sugar
2 fresh bay leaves
3 cloves of garlic
Preparation steps:
1. First of all, cut the mushrooms into strips and soak with the previously warmed-up wine. Mushrooms have the ability to absorb a lot of liquid, which is exactly what they'll do with the wine.
2. In ½ cup of olive oil, lightly fry the chopped onions, garlic and red pepper. Then, add the mushrooms and the wine and let it cook until the wine disappears.
3. Add the tomato and lower the heat. Finish by adding the rest of the ingredients, the broth, the tomato extract and the bay leaves. Season with salt and peppe to taste. If necessary, add 1 teaspoon of sugar.
4. Cook for 30 to 45 minutes until it reduces and after removing from the heat, add chopped parsley.
