Cod with tomato
Ingredients: (4 servings)
300-400 gr salted cod from the thick part
2 onions
2 cloves of garlic
3 ripe tomatoes
1 parsley sprig
Oil
Salt
Preparation steps:
1. Drain the cod which has been put to soak the previous day in water which had to be continuously changed.
2. Boil the water and briefly scald the fish to be able to take off the skin, bones and cut it up.
3. Fry the finally chopped onions in oil, and before they turn brown, add the chopped tomato and parsley. Lightly season with salt and pepper. Check the salt first because cod is quite salty.
4. Pass the tomato mixture through a strainer or put in the blender.
5. Separately, crush the garlic cloves and sauté in oil in a clay casserole.
6. Add the fish, and before it changes color, add the tomato sauce. Let it cook for a few minutes, adding water if it needed.
Variations and tips:
To make the sauce tastier, you could add some teaspoons of canned fried tomatoes. Another option is to use a home-made or canned tomato sauce or a left-over sauce. Cod is a white fish which, as all the fish of its kind, provides a great amount of minerals, proteins, vitamins and very little fat. Cooking it with tomato barely adds any calories, resulting in a delicious dish which is not fattening at all.
